Als piramides sieren ze het landschap. Een lang leven zijn deze bietenhopen weliswaar niet beschoren. De bietencampagne is over halfweg en dus draaien de suikerfabrieken non-stop. Kronkelende slijkwegen getuigen van een voortdurend af en aan rijden. Alleen al in België wordt gemiddeld 45.000 ton suikerbieten per dag verwerkt. Speed is the key. Van zodra de biet wordt gekopt start de klok. De daling van het suikergehalte wordt ingezet. Hoe langer ze blijven liggen, hoe minder suiker, hoe lager de opbrengst. Met de vorst op komst zullen de piramides beschermend worden ingepakt. Alsof Christo onze boeren een handje toesteekt. Maar hier gaat het vooral over de kunst van juiste timing. Fluctuerende prijzen. Volatiele markt. Een hoop stress. Hopelijk smaakt de winst zoet.
